I need protein and other stuff because of increased physical activity. I like chicken so I am curious if you guys have some easy recipes because I am not a good cook, except for eggs and sandwiches.

So what are some of your grilled chicken recipes? Or chicken cooked in skillet?

Chicken
Grill
Marinating Pan
Jar of Huy Fong Chili Garlic Sauce or Sriracha
Pepper

Put your chicken in the marinating pan. Add 3 or more tablespoons (to personal taste) of the Chili Garlic Sauce/Sriracha. Rub the chicken with the sauces and let sit for 45 minutes to 2 hours. Fifteen minutes before you are ready to prepare the chicken, prepare a nice charcoal grill. Don't use gas grills because they suck and only real men use charcoal. Add some Mesquite charcoal in with the rest of the charcoal and start the fire. Throw on the chicken and cook to personal preference.

Enjoy.

Dredge trimmed and rinsed chicken breasts through sour cream and then through crushed Ritz crackers. Lay breasts on foil-lined shallow pan. Drizzle 1 stick melted butter over chicken. Bake uncovered at 350 degrees for 30-45 minutes.

thanks guys, I prefer the grilled and skillet recipes because this is more good nutrition as well as good taste. deep fried is good too but I don't think it would be good calories

Pineapple Glazed Chicken.

You will need:
2 chicken boobs
2 Tsp Oil
1 Tbsp Cider Vinegar
1 Tbsp Barbecue Sauce
1 Tbsp Brown Sugar
1/4 cup Catsup (or Ketchup)
1/4 cup Pineapple juice (I just opened a can of pineapples and drained off some juice for this adventure).

You probably have all of these things in your kitchen right now. If not, I'm betting you're missing the Cider Vinegar and the Pineapple juice. If you're in a pinch, orange juice will work just fine for this, but don't skip that Cider Vinegar. It adds a good kick to the recipe.

Mix everything together in a bowl. Now, if your brown sugar is hard and clumpy, you might have to put this stuff in a saucepan on LOW HEAT to soften and mix the ingredients.

One thing that makes life a little easier for me is to put a thin layer of marinade liquid on the bottom of my marinade bowl. Then put the chickens in and cover them with the rest of the marinade. Put the chickens in the fridge to marinade for as long as you desire.

Now we can start cooking on the grill. MAKE SURE YOU'RE COOKING ON LOW HEAT! High heat will burn the chicken on the outside and leave the inside raw. You don't want that. You want a nice, evenly cooked chicken.

Now, every time you flip the chickens, you should brush on some of the marinade. This will glaze the sauce onto the chicken. I flipped mine about 5-6 times. After 15-20 minutes, you should have something like This

Honey Soy Chicken

Chicken boobs
1/3 Cup Soy Sauce
2-3 cloves Garlic, crushed
1 small onion, grated (I use onion powder because I am lazy and only tolerate onions, and barely at that)
Pepper
1 T honey
1/4 c cooking sherry (or Green Ginger Wine, I was out of this)
A saucepan
A grill
A container to let the chicken sit to marinade
A saucepan
A grill
A container to let the chicken sit to marinade

Pour all the ingredients into a saucepan and put it on the stove on LOW heat. Also, make sure you clean your stove. Food tastes much better on a clean stove.

When the honey has softened and the sauce mixes well together, remove from head and place the chicken in the marinade. The time is completely up to you. Some people like to let it sit for hours, other people think 15 minutes is long enough.

Grill with low heat. After 10-15 minutes start brushing on the leftover marinade and turn a few more times. Slice a chicken through the thickest part to check to ensure that it's done. Serve.

Anyone got decent General Tso's recipes? Maybe Sesame or Kung Pao chicken? I wonder if it's possible for it to taste and good or maintain any solidity/consistency without being fried, just grilled or baked. I don't have a deep fryer but I might get a wok someday. There needs to be some at least half-healthy recipes!

Lightly brown some chicken.

Pour some prego, ragu, sauce of your choice, all over the chicken. I sometimes add some tomato paste, to thicken the sauce.

Put it in the oven at 300 degrees for a half hour, turn it down to 250, let it cook slowly for couple of hours.

It falls apart, and is very tasty, easy to make.

Sautee cubed chicken with a bit of olive oil until cooked, add cooked pasta and some good pesto (you can get good fresh pesto from the deli section of the store.)

Emeril rosemary garlic marinade is the best. Just broil or grill.

I just did 12 lbs. on the grill and froze most in freezer bags. This is so handy to pull out for omelets, salads, or putting in lo-carb wraps with some feta, peppers, onions, raw spinach, and a little salad dressing.
