Chicken breast recipes?

What are some recipes you guys use to prepare chicken breasts? The only way i've cooked them before was breaded and fried as chicken cutlets. Looking for something healthier than this though.

Supermarket sells grilled chicken breast for $12.99/lb, which I pay for quite often but it's pretty ridiculous.

If you like Indian food, a really simple recipe is to find an Indian sauce at your supermarket (e.g. chicken korma, tikka masala, etc) and follow the instructions. Most of them are incredibly easy: brown the chicken on oil in a frying pan for 5-10 minutes, pour the sauce on top, and simmer for 15 minutes. After that, serve on top of rice/quinoa/veggies/whatever for a really quick and delicious meal.

As for breaded chicken, it's not too bad as long as you use the right breading. You can find whole wheat bread crumbs with minimally processed ingredients in stores like Whole Foods, make your own bread crumbs from whole grain bread (plenty of recipes online), or even use a complete substitute, such as ground almonds, coconut or flaxseed. Use eggs as the "sticking" agent and you get yourself reasonably healthy, all natural and delicious breaded chicken, which is tasty by itself or as part of other recipes such as chicken parm.

Sweet, thanks. I'll pick some indian spices up later this week. I'm not that worried about breaded chicken most of the time but sometimes I get enough fat from other foods and need to balance it out with leaner meats to get a good protein/carb/fat ratio.

Pretty easy to bake chicken.

Preheat oven to 350 F
Put chicken in for 30-35 min
Take chicken out

That will just give you juicy chicken breast. brush a little olive oil on there and sprinkle some herbs and spices and it will taste even better. Or, marinate the chicken for a few hours in whatever you feel like and bake it like that. Bake some onions along side to throw on top of the chicken. All easy. You can even bread the chicken. Dip it in some eggs, or milk if you want to go that route, do your breading thing and pop that in the oven. I find that finely chopped almonds make a nice breading.

I like to bake all my chicken breast at once so I dont end up using the oven four nights out of the week. Chicken breast goes great on a salad! MMmmmm

I like McCormick's Grill Mates Mesquite Marinade. It's a powder that comes in a packet and you mix it with oil and water and marinade the chicken in it for a couple hours. Gives it a nice Mesquite BBQ taste without all the extra sugar in BBQ sauce and seems to tenderize the meat too.

I do the same ting as illusion88 for the most part. And McCormick's do have good seasoning to put on that is salt free. If you have herbs and spices, they will always give it in extra kick.

For me, I cook some onions with my chicken breast and use McCormick's salt free seasoning or herbs and spices. And I have brown rice with my chicken breast as well.

Indian sauces with quinoa sounds like a good idea. Ima hafta try that. Quinoa's pretty tasteless without some help anyway.

Hey pretty good recipies I will have to try baking it. I just throw them on a pan with some olice oil and cook them, but honestly its not a method that I really like anyways because it comes out too plasticky or too dry (and I generally LIKE dry meat...so you get an idea of what is happening lol).


12.99/lb? Fuck that! Go to CostCo and get a bags worth (a few lbs?) for like 17 bucks!

Lookup the recipe for Morrocan chicken. Very simple to make and delicious.

All it requires is mixing up some spices then rub the chicken breasts down with them. Cook them in a pan for 3 mins a side. Add some broth, chickpeas, diced tomatos, and squash cover and let cook for 10-15 minutes. Serve with couscous.

I usually marinate mine in Italian salad dressing for a couple hours, and then grill them or smoke them. I'll often cook a large batch at once and then chop them up to put them into other meals (i.e. salads).

I usually just bake a whole bunch of them at the same time. Last time I poured some lemon juice and sprayed a bunch of lemon pepper over them. Was tasty.

If you warm them up in the microwave with some salsa over them it's pretty good also.

I have this affinity to Middle Eastern food (probably because I grew up eating at home!) so I will try on the weekend!

Yep, two weeks ago Smart Chicken (natural/grain fed/free range) thieghs/drumsticks were on sale for .99/lb at Harris Teeter.

Cook some quinoa, add some pesto and grilled/broiled chicken breast. I use the "low energy" method for quinoa -- bring it to a boil for 5 minutes, then let it sit for 15 minutes and it's done. This can be served hot or cold.

I eat chicken strips instead of chicken breasts, they're easier and quicker to cook. Marinate for at least half a day, the more time the merrier.

1/2 cup soy sauce
1/4 cup vegetable oil
1/4 cup red wine and vinegar
1 tsp. oregano
1/2 tsp. basil
1/2 tsp. garlic powder
1/2 tsp. parsley
1/4 tsp. pepper

Non-metal dish.

You know that red pepper thingy you put on your pizza at a pizza shop? I tried it on my chicken and it works great!
