That should be adequate. Give it a try and watch the Resource Monitor on the server to see how it goes.

I watched the resource monitor in Windows, didn't know Plex had one built in.

I'm going to throw a couple new sticks of RAM in it to make sure its not some weird RAM issue (and because we have piles of DDR3 laying around).
