A central part of the soundboard can be removed and swapped for one of many different chunks of wood to alter the signal generated by the pickups.

Interesting approach. From what I gather, change the guitar tone using sound board sections made from different types of wood and software processing to create a "virtual guitar body" with varying tone characteristics. He mentions using different materials (plastic, concrete) to create completely new guitar tones.

Yeah. It's not very chameleon-y. It doesn't blend into anything/mimic visual appearance.
However, it mimics sound very well. Thus, the Mockingbird Guitar, or the Mocktar. I like it. 😛
 
I've had the same idea ever since I started playing guitar. I should sue those bastards. 😛

Not really. Pedals don't make your guitar sound like a different type of guitar. They distort the existing sound of your guitar. But the original tone of your guitar still exists.

Right. I wish the demo was longer, but it seemed to work pretty good from what I could hear. It would be sure fun to play around with.

I dunno, I've seen really good renditons of electric guitars w and w\o distortion from an acoustic and I've heard decent acoustic sounds coming from an electric guitar. I understand the source and that nothings going to sound exactly like it but it seems like working on that technology would be better. Also, did you see how he had "unclip" the strings when he was replacing the center piece? I'll bet that gets it out of tune.
