Does King, Queen and Jack equate to a number or is it just thought of as numbers for people that can't remember King > Queen > Jack?

Depends on the game. In Blackjack, K Q J are consider a value of 10. A is considered 1 or 11.

in most games the king > queen > jack so they can be seen as 13 > 12 > 11. Not sure where it came from.

I dont think it has anything to do with people not being able to remember numbers.
