Will this motherboard's full surround sound part give outputs for each speaker or just an optical out?

That would depend on the individual board. "Canterwood" is just the name of the chipset.

The AOPEN AX4C-Max has both analog 5.1 audio out as well as optical in/out.
I would guess almost all the others that support 5.1 sound would have at least analog 5.1 audio out (discreet out for each speaker)
