I vaguely remember something about a major Canadian city originally being a fort? It's built on a hill and the walls are still intact?

Quebec?
 
Well, generally speaking, many cities in Canada, especially the eastern ones, were forts to begin with. However, you are probably thinking of Quebec City, which was founded by Samuel de Champlain in 1608. It was the Capital of New France until the British under General Wolfe defeated Montcalm at the Battle of the Plains of Abraham. Check out the pics on Wikipedia.

Quebec City. Most of the major cities in Ontario and Quebec were made from forts(Fort Erie. Fort York, Fort Henry).
