Can someone please tell me the difference between these two systems?

The specs listed are exactly the same for both. The only visible difference is they each come with different included software.

Does anyone know what the hardware difference is between these two systems, if any?

Dell XPS Studio 435

My wife and I want to buy one of these two. If someone can tell me what the hardware difference is between them (Power Supply, maybe?) I'd really appreciate it.
 
Looks like the same exact model. Not sure if they are just making one look more like a media system over the other, but by the specs they are the same. Not sure I'd want 6 x 1 gb's of DDR3, but that is what you get with this kind of system.
 
The 121M is older, the 435 is current. At least you can go to Dell's website and buy a 435, but the 121 is old and no longer for sale....but that won't make a difference to the sheep that buy Dell desktops.
 
On the 435...would I notice any appreciable difference in performance if I pulled out 3 of the 1GB sticks and went to a 3x2GB, 3x1GB (9GB total) system?

Well you'd see a 3gb increase in RAM.

Of course you probably won't be using up 6gb in RAM.

I would doubt it. But maybe it's more ram for superfetch? (I think that's what it was called..)
