In the storage section it says:

Southbridge
2 xATA 133/
2 xSATA 3 Gb/s ports Support RAID 0,1,0+1,
Promise R20378 RAID controller
1 xUltraDMA 133/ supports two hard drives
2 xSATA
Support RAID 0,1,0+1,

So, uhhh... can it support 4 SATA 3Gb/s drives or just two? I don't want to do any kind of RAID on this. I'm thinking about getting four 500GB SATA drives for 2Tb of usable space total. Will the two drives on the Promise controller HAVE to be in RAID?

The raid controller will not require the drives to be placed in a raid array. You can attach 4 SATA drives to the system. You cannot make a Raid array out of all 4 drives even if you wanted to.

it appears to have 2 SATA controllers - 1 Promise with 2 ports that are SATA300 capable & presumably the other 2 are off the VIA 8237 sb which is only SATA150 capable (but SATA300 drives will run OK if forced to SATA150 compatability).
