I don't have xeon,i don't have 4gb/2gb ram,i don't have 256mb card,
mine is a geforce and maya says to go for quadro for more performance,stability,refresh,display
also,i want to go into movie making,graphics designing,hardcore animation/graphics and also game development.
Maya does "prefer" Quadro, but works fine on any recent Nvidia video card and works pretty good on any recent ATI card(has a few more glitches, but nothing serious---I use a 9800Pro with Maya)
Max does not require a DX9 video card.

Not sure what Flame(for Mac?) is, but if it doesn't work on x86 you'll have no choice but to use something else.
