Can a steak be Marinated for too long? Edit: Looks like I didn't.

Got some filet mingons on Tuesday and marinated them in basically a water, beef buillion, and worstershire sauce. Was going to cook them on Friday but I didn't get a chance. The package said sell by yesterday. Is it still safe to eat or am I just begging to get sick? :/

Well it depends on how you stored them. Also depends on how you plan to cook them. Filets are best medium-rare to rare but I would not eat it cooked that way in this case. If you cook it medium-well you should be fine in my opinion.

Stored them in the fridge in the marinade. The fridge keeps them about 34 degrees. We usually cook our steaks to near well done.

Dude if you are going to marinate something, dont do filets. Heresy!

😛

Why is marinating filets heresy?

I'm going to guess if it isn't white that it should still be good to cook and eat?

Edit: Ok looks like the case. Thanks everyone for your help. The community knowledge of Anandtech helps again! 🙂

Maranades are usually reserved for tougher cuts of meat. Overmarinating filets tends to overpower the taste of the meat (which is mild compared to other cuts). The beef then just becomes a vehicle for conveying the flavor of the marinade. Now if you want to marinade for a very short time, that would be better, or even better yet pan fry it (salt and pepper ok), and make a sauce from the pan drippings.

white really just means that the marinade cooked it. if you have an acidic marinade it will cook your meat, so you only want to leave it in the marinade for a coupel hours
