My gun uses a 7.62 x 54. My buddies gun uses a 7.62 x 51. And also very common is a 7.62 x 39. And there are probably more 7.62's then that, I'm no expert.

Tumbling is a common term that most people understand. In reality, the 5.56 tends to "yaw" inside human flesh (or ballistics gel) creating a larger wound channel than if it stayed dead on course.
And there isn't much you could hide behind that would provide you adequate cover from a 7.62x51mm (.308 Win.) While certain a concrete wall 6 inches thick will stop it, that's around the bare minimum. A full metal jacket round will easily penetrate 1" of regular (non-hardened) steel. There is no place behind a car that would shelter you from a .308. Standard brick, or cinder block walls have 0 chance of stopping a FMJ .308.
OF course there is a place behind a car that would shelter you from a .308, it's called hide behind the engine.

as someone noted above, depends on projectile type/construction. armour piercing round should be able to penetrate masonary brick wall fairly easily. Standard ball ammo might have trouble as it would "mushroom" and spread the force of the impact. Armour piercing is constructed to shed its skin as it penetrates, keeping it's core intact and the kinetic energy moving forward in a tightly focused point.

i have put a 7.62X39 thru a 4" or 6" concrete wall of an old bunker before (it was old, may have been weakened by age and weather tho). that was the old chinese fmj steel core rounds tho, the russian hollow tips wont go thru it. this was at 20 or so yards. it was pretty cool, it left the jacket on the outside of the wall and the steel core stuck in the opposite wall inside. i wish i had kept a half crate of those chinese rounds, im too lazy to look up places to get those again.
other notable things they will go thru... turntable, washer weights, car doors, Kmart gun safes, 18" stuffed barney dolls, kegs, jeep seats, tires, 21" TVs and people. the people one im assuming, the others have been tested.
