So I'm making this for my wife's birthday and know nothing about stitching.

I don't have a sewing machine. In step 2, where the guy uses a machine to stitch the borders and also the belly to the body, what hand stitch can I use?

In later steps he mentions slipstitch to attach hands and legs to the body. Can I use the same?

That's adorable. Yes, you can use a slip stitch, I'd personally use an overcast stitch because I can do it neatly a lot faster.

That site also mentions whipstitch for stripes. Is that good and easy to learn?

Yes. Do a couple of practice stitches so that you have an idea how you want them to look. You'll be fine. Interesting site BTW. Thanks.
