I think it's recommended that you use cat3 or higher, so yes you can do that

Yes, it works fine.

If you're doing cat5 and RJ45 all the way, note: while you can physically insert a RJ11 plug for a phone patch cable into an RJ45 jack, it will bend the pins in a way that might degrade data performance if you later use the line that way instead. So if you were going to do this, I suggest making your own custom RJ45<->RJ11 phone patch cables (this is what I did).
