Is a pain in the ass to prepare.

Maybe I just have crappy tools, but it always seems ten times more difficult to peel and cut than other vegetables.
 
Seriously? We have butternut, acorn, or buttercup squash about once a week, I've never considered it difficult to prepare. A 50 pound hubbard squash... that's a little difficult to cut up, but again, nothing that should really be difficult enough to whine about.
 
First you need a sharp knife. Then, you cut the squash in half where the bulge at the bottom begins to flare. Stand each half on their cut side and cut one inch strips from top to bottom working your way around the squash. Do the same with the bulbous end, cut in half and scoop seeds. For big squash like mother hubbards, a hatchet works well. 😀

I only make acorn squash, but it seems dead simple to me. I cut them in half and scoop out the seeds. I'll spread a little olive oil on the exposed flesh. Maybe add something for extra flavor. Then I just throw it in the oven to cook.

all winter squash is like this.

Hubbard squash is my favourite squash next to zucchini.

I only make acorn squash, but it seems dead simple to me. I cut them in half and scoop out the seeds. I'll spread a little olive oil on the exposed flesh. Maybe add something for extra flavor. Then I just throw it in the oven to cook.

slice... brush with clarified butter..grill 4-5 minutes on each side or until tender.

A serrated harp-style vegetable peeler works well.

Also, Costco sells peeled, diced butternut squash at a reasonable price.
