I'm looking for a place that sells beef in large quantities, like 10 pounds or bigger. It would be a pretty sizable chunk of meat, around the size of an alternator. Does anyone have any ideas where I can find something like that online?

No we can't! INSURING that there is good quality is quite different from ENSURING that there is good quality... clearly this is a major discrepancy that re-opens the entire question.
