Building Gaming PC Help

Hi, I'm trying to build my own gaming PC for the first time and I need some professional opinions. I want to be able to play games at their highest settings and I'd also like to be able to run game engines and modeling software like Unreal Engine 3 and 3ds Max. What do you recommend for CPU's, graphics cards, motherboards, memory, cases, power supply, etc? I'd like all the details, please. Also I don't want to have to spend a ton of money($1000+). Right now my price range is around $800, but don't only recommend the best for under my price range, if I really should invest more I guess I can keep saving. I just want to know what you think. I've read a bunch of guides online for building gaming PC's, but I don't really trust those, I want to hear the opinions of people who actually have the products, not just a bunch of reviews. Any help would be much appreciated, thank you.

Processor - Intel i5 3570K-17k [you can OC]
Motherboard - ASUS P8Z77-M PRO-12k OR ASRock Z77 Extreme4-10.5k [both mobo is OC supported]
PSU - CORSAIR HX750-9.2k OR SeaSonic X760-9.5k[Both are SLI/Crossfire Ready and Modular PSU]
GPU - AMD HD 7850 2GB-16.5k OR AMD HD 7870 2GB-23k
Ram - Corsair XMS3 OR G.Skill RIPJAWS 4GB x2-3.5k
Cabinet - Corsair Carbide 400R-5k OR Nzxt Temptest Evo-5.5k
CPU cooler - Noctua NH U12P SE2-3.9k
Monitor - DELL ST2220L-8.5k

Do you need a Keyboard, mouse, and/or monitor? If so, that'll cut a nice chunk out of your budget.

case - Rosewill Challenger-u3 (on sale today on newegg) $39.99
(I have this case, its spacious, has 3 fans, gets the job done at a low cost)

MB - Asus P8Z77-V LK LGA 1155 $139.99
(Also own this, will do everything you need, OC, SLI, has a friendly bios, etc)

Video - radeon 7850 2gb any variant will really do ~$260
(I have the XFX double-D 7850, runs really quiet. The 7850s will OC
around 30-40% easily, so its a great card for the price)

CPU - I5-3570k $230
(the k variants are overclockable. If you want the best, the 3770k is $100 more)

memmory - 16GB (4x4GB) G.Skill ripjaws ($25 off today on newegg) $95

PSU - I would at least get a bronze rated PSU with 550 watts, I dont have a specific one to recommend, should cost you around $110

CD/DVD - just pick one the color you want really, around $20

HDD - you can get a 2TB drive for $120 at the moment
(you can later get an SSD to speed things up)

Ok, well the total cost of all that is right around $1015 and that doesn't include a kb, mouse, monitor. If you need to cut down on some things, you can always drop to 8GB of ram, and a 1TB HDD. I wouldn't skimp on the CPU or GPU though, as they will directly effect your gaming experience. You can also save money if you can salvage parts from an old rig like a HDD, PSU, CD-DVD and case.
