Everytime I make brownies, the edges (inside the parameter of the pan) tend to cook more than the middle resulting in that not so chewy/fluffy brownie goodness. We all know the middle is the best part🙂

So how to keep this from happening?

Shortening. Use a different pan.
 
actually, i love the edges. i'd much rather eat the crusty and chewy mix than to eat simply the chewy middle.
 
Pan? It's better if you cook them in ramekins imo. Then each individual serving is cooked the same, no edge or middle pieces.
 
damnit! now i have to go get brownie mix... >_< mmmm marble brownies... you better be glad i was already going to the grocery store! but yeah... dry crusty edges after a few days = suck... fresh crust, mmmmmm.
