I like the middle brownies myself though; if you don't have milk, it's already pretty moist and works well.

Plus badly made brownies will have edges that are more crunchy than I would like.

1. There are no badly made brownies
2. When the edge is chewy/crunchy it tastes like a chocolate cookie. Therefore I'm getting cookie AND brownie goodness in one glorious mouthful. Mmmm.

Too many people use veg oil in their brownies thereby rendering them nasty. Nothing to do with the topic but there it is. On topic: so many people burn their brownies that it is safer to go for a center brownie than to risk burnt chocolate flavor.

If you slightly undercook the brownies using the all edge pan, then ALL of the brownie slices are center cut brownies.

Your coworker is a moron for not realizing that with a narrower brownie, you can more consistently control the texture across the brownie.

Those look good. I like to make them with Raisinettes mainly because I like brownies with Raisinettes but also because it bothers people. They think "Ooh, brownies with chocolate chips, mmm". Then they bite into one and act like they just hit a razor blade.

edges are the most delicious part of a brownie. I sure as hell want that edge pan so I can make edge-only brownies...

Depends. Edge is sometimes crispier if I like that hard edge.

But sometimes I just want a softer goo-ier one, and in that case I go for the center.

It's all dependent on my mood.

There's still a center in an "all edge pan." Uniformity is still an issue, and that means the center (even though it's a small center in this case) will be even more undercooked. The concept of edge and center is such that when its perfectly cooked you get a crispier edge and a softer center. It's a preference between the center and edge in such a case. To tell someone to undercook it to get an even more undercooked center... well while it's possible, kinda changes things no?

I like center edge pieces. You get the chewy center feel on one half, and the nice crispy edge feel on the other.

I don't like corner pieces.

Center > Edge, because the egde brownies crumble more when you eat them (managing crumbles sucks). Taste is the same, with the softness of center making it that much more succulent.

I think it also depends on the type of brownie, as the ones with the extra hersheys chocolate in it is even better with part of an edge, part crisp and part gooeyness.
