So this round I used Soyrizo (Soy based meatless chorizo) from Trader Joes.

Pretty decent. A far cry better than the low-quality sausage used on last round, but (and this is a kind of frustrating point) lacks the texture of actual meat based sausage. But the flavor is (surprisingly) quite good.

next round, i'm going to fry the potatoes with the lid off, separately from the beans. purpose being to dry them out and crisp them up, to hopefully bring back some texture to the dish.

the oil I've switched to using is avocado oil. doesn't have much of a flavor, but claims to be healthier (good fats and all).

You should consider an Instant Pot:

It's an electric pressure cooker. Basically a fast version of a crockpot. Potatoes take about 10 minutes. Dry beans in 45. Basically just makes everything quick. Plus you can do stuff like hardboiled eggs, caramelized onions, etc. A lot of people saute in it using water, then pressure-cook the food for an oil-free meal.

In addition to beans, have you considered hummus? Makes a nice base. I'll sometimes throw some chicken & hummus together for a nice Middle Eastern-style wrap.
