So if he says they had sex, she says they didn't, and there's no other proof (didn't see any mentioned), how can there be a conviction?

Gotta be some other evidence besides just the boy saying they did it.

at the very least, she really needs to not be allowed to teach ever again.

A 15 yo not much different than a legal 18 yo physically or mentally. At 15+ most kids have their adult bodies.
