Bought cut pork belly (bacon) from a local place

Wow. That's all I can say. This bacon was bought from a farmers market and was amazing. I just panned cooked it at a low temperature. The bacon definitely looked different raw, but looked amazing once it was done.

Was a very different texture though. I never got crunchy/crumbly crispy though, still had a good chew to it, but such a rich flavor and not masked with a maple syrup taste. I'm going to use the rest of the bacon for BLTs tonight. Mmmmmm.
 
I just recently discovered the thick sliced peppered bacon at my local butcher. It is only $2.99/lb which is basically the sale price for prepackaged bacon, but it is 100% more crackin'.
 
yeah I am finding local business for various things and often i find it either better quality, cheaper, and/or better service. Speaking of which i need to hit up midwestern meats.

If you don't like maple bacon don't buy maple bacon. Most of us normal folks prefer the hickory style.
 
about 11pm last night I awoke my wife who was sleeping off a headache by starting up 5 slices of bacon in the frypan. hehe. just sitting there playing burnout paradise on the 360 and thought to my self 'damn, self, bacon sounds good about now'.

/need to add that I showered the bacon as it was frying with fresh cracked black pepper.

i've just spent 30 minutes looking up roast pork belly recipes thanks to this thread


pork belly with lentils may be the way to go
