My understanding of genetics is rather elementary, but given that blue eyes are recessive, wouldn't it require, at minimum, two people with blue eyes to create one of these demon-spawns? Or is the statement that blue eyes existed beforehand, but the all those in the sample currently share a single common ancestor?

recessive genes don't require both people to have them to be passed on.

eye color, though often taught as mendelian, is polygenic. Any color can come from any color, as far as it goes. Two blue eyed parents can have a brown eyed child, for example....

I have blue eyes, both my parents had blue eyes. My wife has hazel (brown) eyes and of my children, one has brown and two have blue.
