Meat doesn't smell good until it's cooked. It tastes like it smells. Therefore, more cooking equals more smell equals more flavor.

I was at a Japanese Hibachi/Sushi place for lunch today also with co-workers. There were 6 of us, half white and half black.

One co-worker that is black got his steak well done. Two got theirs medium.

Out of the 3 white guys, two got theirs medium and one got his medium rare.

I always order Medium Rare, but I think that's just the first way I knew as a kid and just do it out of habit. I've had Blue Rare a few times and like it. As long as there's a decent browning on the outside I don't care how raw the inside is, the Cooked taste is all on the outside. Over cooking a steak makes it way too dry to enjoy and tough like leather.

i normlly order medium-well as once i cut it open at most places it looks like medium and i don't really care for the rare side.

I cook my ribeyes medium-rare with a small portion rare... I just love the texture of the rare portion.
