whats wrong with a short marinade?

What cut of meat is this steak?

If I'm grillin' that steak it gets nothing but a few spices. In your case (pan frying) a little marinate wouldn't hurt, I'd add something sugary to your marinade to balance the worchester sauce, maybe honey or brown sugar and a little lemon juice.

Ughhhhhh!

No marinade. And NEVER, EVER, EVER, EVER put a steak in the oven. (if you do, it's just a really thin roast)

you are incorrect on the oven rule. if you have say a 2 inch steak, you can't do it all on the pan. might as well eat carpaccio.

Here is what I have decided to do per all the good info🙂

Marinade to room temp with worchester sauce, italian dressing, salt, pepper. Pan for one minute both sides @ med-high heat to sear. Oven 500 till done. Roasted asparagus on the side😀

I'll post pics.

That's simialr to what I do, a cajun seasoning rub, I grill on both sides for a sear, place in oven to cook, usually put a tablespoon of butter on top of it while in the oven.

how long in the oven to medium well?

I would say about 3 minutes per side.

if you are going to eat it medium well, marinating isn't a problem.

the main reason people don't marinate steaks is that leaving a steak in a salt solution for an extended amount of time causes osmosis to happen which removes the water/juice from the steak which makes it tougher.

But if you are goin to eat it medium well, you won't tell that much of a difference.

hyah

just like that, reduce time slightly since your cut is a bit thinner

its delicious with most any cut of meat; dont be concerned he use da rib-eye in that one.

Ummm, you don't want it to be anything past medium. You just lose too much juiciness and flavor. Mmmmm, steak...

Edited for idiocy.

I think you mean you don't want anything past medium

As I said in a previous thread,

Take your meat rare, your coffee black, and your whisky straight.

Be careful with the marinade, especially the IT dressing. The Sugar content could throw off the carmelization proccess. (This means burning.)

No marinade? Some of the best steaks i have had in my life were prepared with marinade.

but what do i know, i only live in texas, right?

Steak cooked medium well tastes GOOD. Coffee with milk and sugar tastes GOOD (to say nothing of a tasty cappuccino). Jack and coke tastes GOOD.

you are still in the yummy phase of your life. Nothing wrong with that.

Its like, if you offer a 5 year old kobe beef carpacio or a happy meal, the 5 year old will probably pick the happy meal.

Who is to say what tastes better.

My point exactly. I also enjoy my coffee black, and straight whiskey and scotch, but there's a world of flavor you miss out on if you're not willing to mix tastes. To this day I don't understand exactly what goes on inside a Jack and Coke that elevates the taste to greater than the sum of it's parts. I don't like Coke.
And "the yummy phase of your life?" WTF does that mean?

thats just a phrase i picked up from somebody.

the yummy phase refers to the time in your life before you found more exotic/adult tastes (coffee, alchohol, cavier, etc....) enjoyable.

Right. Because all the best chefs come from Texas, right? 😉
