just because the dish has the same name in both places does not make it the same food.

the way it's served in chicago, it's just another pasta dish. pizza is what is served in NY.

i like both equally but i don't consider them the same food.

Ok, what's a California crust, and how can you have chicago thin-crust pizza? Isn't thin-crust pizza by definition NY-style pizza? 😕

Regardless, both are good if made right, but I prefer NY style.

For many years I have been trying to learn the secrets of making a good thin-crust pizza. I've had this type of pie at various pizza parlors such as Shakey's Pizza Restaurant, Pizza Inn, Pizza Hut, and the Village Inn Pizza Parlor. I have been told that this type of pizza is officially known as an "Original California-Style" pizza and is also found at such restaurants as Straw Hat and Round Table. To quote the folks at Straw Hat, "California crust is special, it's a layered, flaky crust. It's airy and crispy on the bottom, yet bubbling on top. It has a cracker-like crunch, and is never soggy or limp."

It's thinner than New York style. Like Pizza Hut's or Domino's thinnest pies. The crust is crispy and flaky. If you're making it at home, you make California crust with a pan (the kind with big holes to let the air in) and you make New York style with a pizza stone. They're both very good. When I'm making pizza at home I usually make two California crust pies while my stone is heating up, then I make a New York style pie. I need to get a third oven rack so I can heat both of my stones at the same time and make breadsticks too.

You are either talking about Pepe's or Sally's. Probably Pepe's. The guy who originally opened up the shop is credited by many as introducing the first Pizza in America. By the way, the guy who started Sally's originally worked for Pepe's and was (I believe) Pepe's nephew. They are both on Wooster Street in New Haven and it is the best pizza I have ever had the pleasure of eating.

Certainly isn't papa gino's. That is the most god awful pizza I've had the displeasure of tasting.
