You can put XP on there without problems like what others have suggested; but i say go with 2k and customize it for your likeing. If you(or her) want to learn something new = LINUX is the route to walk.

Dramtically faster boot times.

I'd run XP and disable the Themes and any eye candy. It'll run fine on any P2 or better system with enough RAM (at least 256MB in my opinion).
 
I'd toss XP pro on there, if you disable extra services and the eye candy it looks and runs pretty much just like win2k + has less issues w/ newer software. I'm runing XP on some old compaq deskpro's that are P2 333's w/ 192 megs of PC100 and 6.4gb HDDs' as long as you don't install service pack 2 you should be fine.
 
win2k... but i hope ur around for tech support. its less friendly. when win2k fscks up, it just gives a blue during boot, no restore points or boot from last known good config stuff. it just sits there and laughs at u. its just easy to break.
 
I'd say 2K. It's less of a hastle then Xp is IMO ...
however, on a 350 I'd really run Linux .. (I know, it's not an option here ...)
