Even if it comes with a dongle, you can still use the BT chip on the Mac. Just throw away the dongles. If it says it is BT then it is using that protocol.
All the dongle-based keyboards and mice I have found do not appear to be bluetooth based. In fact, none of the B&M stores seem to carry BT keyboards at all.
I cannot believe that Apple makes the only BT keyboards.

Good luck, I have yet to find good bluetooth keyboards and mice.
I have found bt mice, but they are always the silly small travel mice for notebooks.
I'd love to find a nice bluetooth keyboard/mouse combo.
I love my trackpad, but there are times when I need a mouse. The trackpad does not always map well into every situation (Like using the netbackup application though X windows)

These, purchased as a combo, come with a dongle if your computer has no BT chip. They pair with my MBP without an issue ( or the dongle ) and have great battery life.
