Best/most well-known authentic French dishes or desserts?

I am going to France with my husband for a month in December, and am looking forward to eating fresh baguettes with fruit and cheese every morning for breakfast. I am not very familiar with French food, and was wondering if there are any dishes or desserts we should go out of our way to try while there?
 
takeing a micheline guide to go by, i hope?

i wouldnt bother focusing on a specific meal or desert, but get the guide and eat at reccomended local places and just eat whatever they offer 🙂
 
Breakfast:
Café au lait + baguette with butter, jam if you're lucky. Nothing else. Nice hotels offers more of course, but generally the breakfast is not the highpoint of french cooking.
Lunch: Mixed salads, quiches, pâté's, dried saussages, and toast (Crouqe Monssiuer or Madame).
Dinner: You got to be kidding? The french kitchen is probably the most varied and respected kitchen when it comes to higher cooking. I seriously advise you to get some books and read about the different kitchens in France. So naming something would be really hard, but Foie Gras (Goose liver) and Crème Brulée are musts.
 
btw I've had 7-8 holidays in France from 1-3 week long, my sister got married in France with a French, so I would say i know a little about travelling there. 🙂

I've been to: Paris, Bretagne, Alsace and travelling around in different regions in southern France.

We tried coq au vin at a local restaurant here in the states, and it was quite disappointing. Perhaps it will be better in French, the other dishes you mentioned sound delicious! I will do my food research before we go.
