Looking for fastest cards.

2-4GB size seems most convenient.

Is the new Sandisk Extreme better than the Lexar Professional?

The best I have found now is the SanDisk Extreme III. For RAW, I would go 2 GB. I use 1 GB for my EOS20D and 2 GB for my 5D. (5D pictures are significantly bigger files)

I really can't say anything one way or the other about the Lexar Pro - never used it.

Excellent. I plan on using 2GB (or 4GB) CFII's with an EOS-5D. I've used the Lexars and they are very fast. I guess you get what you pay for. 🙂
