We usually off-load out old stuff to the USPS Food Collection endeavors. We are trying to discourage them in the fact that they need to focus on delivering mail, which is something they have issues with in my area.

If you heat it up it decrystallizes.
Exactly... just put it in the microwave some and stir. I've done that for years. I'm working on a giant can I bought probably over 10 years ago. I only rarely use honey, but keep it on hand for when/what ever. Some recipes call for it.

As I mentioned previously its also helpful to replace the evaporated liquids with a teaspoon or so of water.
