I'm looking to swap out my current 8GB and buy 16GB 1600 Mhz ram

I'm not sure if my board support higher spec ram but I know it's limited to dual channel

Any thoughts about which option to go for ? OCUK is my usual vender

Go for the Corsair 2x8GB .. you will then have room for even more ram in the future....
