Why are flight simulators such as MS 2004 not used to benchmark systems? I enjoy LOMAC and MS Flight 2004 and these games seem to really stress the hardware.

Probably just cause they are not as popular and may not show off as many of the new bells and whistles as the latest first person shooter. Just a guess.
