My grandmother used to make the most incredible pickled beets. After she died, I tried others a few times but will probably never eat them again.

Yum, yum, eat them up!

whats a good way to cook them?

Boil them for hours. Once cooked you can eat them just like that or pickle them in apple cider vinegar with onions and chiles.

I love them mad beets!!!

I actually like just about every vegetable there is.

Beets with some salt and pepper with creamy butter is just plain awesome.

They are okay. Honestly, we should be using those for ethanol and not corn. Beets can be very useful there.

I haven't eaten beets in a long time, and certainly haven't bought any for many years. However, I wouldn't say they are poor eating. Properly prepared and served, they are delicious. And beet greens are some of the best available, infinitely more delicious than, say, chard. They are at least as good tasting as spinach. And, of course, the greens are very nutritious.

Borscht! With sour cream!

I used to grow beets in my back yard.

Light grill, turn up flame all the way, place beets directly over the hottest part, walk away for six hours. Come back, scrape away the ashes and never buy beets again.

We get homemade canned/pickeled beets and they're incredible. So sweet and so much flavor.
