Bear flips out on a TV show...

That's ooooooooold. It's been on the National Geo channel several times already on one of their shows. What set the bear off was he didn't see her sit down, and when he turned he was surprised to see this strange lady right next to him, and he kicked the crap out of her....pretty simple actually. No one was seriously hurt...

Also notice that even with the trainer all over him trying to pull him off, he never lays a paw or is agressive at all to the trainer...
 
That bear was scared. Watch and see it never really looks at the chair next to it after it sits down. The when it does its like the lady just poped out of nowhere and it freaked out. So would you or I if one minute there was no one and the next your there out of the blue.
 
That's how most animals are...they don't like things "sneaking" up on them from behind. Even domestic pets like dogs can get startled if they are surprised from behind. (that's why you should put their beds in a corner)
