what spawned this idea was that I used to work for a friends dad at the local flea market. he owned a small take out window and all he sold were kabob sticks. after all labor and cost were paid, he was making around 1K profit per day. im not striving for a cool theme, just looking to get make some money doing something i enjoy with the limited items i serve. if 20% of people order turkey legs, id serve turkey legs, but here in jersey, i think it would be like 3%. not even sure if that extra labor is worth it.

Would prefer some non-starch filled selection such as green beans/baked beans, though.
 
Burgers... mix in some Cayenne and som other spices (gives it better flavor). White rice (worked in s chinese resturaunt for 2 years.)

or In n' Out... all they serve is a cheese burger... !!! 100+ plus cheese burger only locations

and id go with kabobs, id be hesitant about pork ribs for a little stand
 
Are you going with commercial smoker and what part of Jersey are you in? If in North Jersey, you may want to check out the competition, Fink's, though they no longer have a sit down place.
 
Dang yankees giving BBQ a bad name. Add some baked beans, cole slaw, and fries/onion rings. If you want some ideas, you need to come to Memphis in May for the world BBQ contest.

From the menu you have, i'd just take a pork sandwich with no side dish.
