Living in Tennessee, we know the key to good pork. I have to say though, not many of us use the slow cooker method. It takes too much time and doesn't really get you anything extra on the tenderness... The real trick is to drop the pork roast into a pressure cooker and boil it for 45 mins or so that way. It'll come out EXTREMELY tender as long as you monitor the temp. Then all you have to do is decide whether or not you want to continue to boil it or cook it further. We do ribs that way too and they come out perfect every time before we throw them on the grill to sear in the bbq sauce and other flavors.

I cook mine on my Grill-N-Roast grill with only one burner lit and the louvers closed. I let it SLOOOOWW cook with smoke chips for 10-12 hours!!!!! About half-way through all my neighbors start wandering over to inquire "what's cookin'" ;)

I cook mine by going to Smokey Bones and ordering a number 4.

Quarter chicken, pulled pork and a half-rack of baby backs. Sauce on the side if you want it, but definitely not needed.

Try Keaton's BBQ in Cleveland, NC near Statesville. It is heaven. For that matter try any in Lexington. For a quick BBQ fix I hit up "Cook Out"

Mustard-based, WTF??? I think you're talking about the Eastern NC-style, which is vinegar-based. I agree, its not really my cup of cue either. But most places west of Raleigh serve up the "good stuff"--sauces with molasses in them.

North Carolina is pulled-pork HEAVEN...damn what I wouldn't give to be in Lexington right now (used to be only 1 hour away, now its 11 hours away :()

i didn't say the meat couldn't have anything added to it, just that dressed up ketchup shouldn't be where your flavor is coming from.
