BBQ Beef ribs or Pork ribs?

Pork Ribs above all - smoked with hickory wood for 2+ hours covered every so often with Stubb's Moppin Sauce

Beef ribs are good too, but whenever the supermarket sells'em they've got giant V-shaped cuts of meat cut out in between the ribs. You wind up getting more bones than meat. These need a long cooking time too - ~3+ hours will make them nice and tender.

Why don't people eat more pork? Is it the 'filthy animal' bible crap? I don't think theres been a case of trichinosis in decades.
