OP what do you have right now? You can use a regular Weber kettle grill as a smoker. I've smoked brisket, ribs, chicken and even did the Bacon Explosion.

Absolutely, this is what I've done for awhile now. The only problem with the kettle is unless you buy a "smokenator" you are a bit limited on the quantity of meat that you can do at one time. 2 full racks is really about my limit on the 22.5 kettle.
 
I like some of the drum smokers I have seen buuuuut from my experience they suffer temperature swings, especially if it's windy outside. Not saying I don't like drums or you can't use them though, I just like something that can hang onto the heat a little better.
Mine doesn't. I got my barrel from the local oil company, it originally contained methanol.
 
If you're smoking ribs that long, you're wasting time. You can't get more tender than falling off the bone, and I get that in 2.5-3hrs.

Apparently you know some secret that most pro's don't.

Most swear by a variant of the 3-2-1 method for Ribs.
 
What cut of rib we talking here?

Only rib used on the cirucit is the St. Louis cut.

I know this as I have attended the Best in the West rib cook-off 3X.

Many of the rib cookers have gone to a high heat smoker with much faster cooking times.

Ok. I could do about 4 hours. Maybe less if I used the crutch.
 
This is how we cook BBQ, throw the whole hog on the grill, cook for 4-5 hours and season with only vinegar and red pepper. Best if it was freshly killed.

just bought a hotplate. it's one of the smooth top ones rather than coil top. it blackened my chips and i smelled some aroma but no real visible smoke. maybe i need chunks? or maybe just more chips (just used a few for this test run)
