I like mashed potatoes with the skins in there as well. Adds some nice color and doesn't make it taste any different.

Well, I didn't vote since:
Microwaved = toss
Oven/grill = eat

To eat it, the skin has to be a little crispy.......

If it's a big potato, I'll usually leave the skin on the plate by the time I'm done. If they are small potatoes that the wife fixed just to eat them before they went bad, I'll usually eat the skin, because at that time it's pointless trying to dig around inside a potato that's only 3-4" in diameter.

I love the skin on a baked potato. Tastes great and it's nutritious.

I don't eat the "flesh" of the potato, and then the skin.

I cut the potato so that there's a hunk of flesh with the skin still attached and eat that.
