I like it limpy with a slight crisp to it. But if you can drop it on the ground and it sounds like you just dropped a ruler, it's not good.
 
Crispy but not crunchy. If I can crumble it into bacon dust, it's over cooked. If I had to choose between overcooked or undercooked, I'd prefer undercooked.
 
limpy no. but somewhere in between. too crispy can be bad too. I'd say the worst ends of each spectrum can be described as "rubbery" and "crunchy"
