I have in my main rig 2 WD 120gig SE hard drives on a Highpoint raid controller in RAID 1. If I get 2 Raptors to go with my ABIT IS7 and put them in RAID 0 (my only option with this board) can I put my "Documents and Settings" folder on my other drives so they are always backed up? Is there a program that I can run that I can scheduale backups to goto a network drive?

If you put 2 Raptors in RAID then 1 WD SE can be used and Ghost(ed) for your backup which can be done whenever you want and you would have the whole OS in check.
 
you can use the windows policy editor to modify the location of my documents folder and a few other profile folders, at least you can do that if you have a windows domain controler, think you can do it in windows

yeah you can, start / run / mmc
file / add remove snapin / add group policy, its somewhere there
