Backing-up SCSI RAID 0

I'm about to set-up 2-36GB U160 drives in a striped array and would like to back them up to an 80GB ATA-100 drive (in removable tray). I was planning on using Norton Ghost, but I just read that Ghost does not support striped drives! Anybody doing this? I'd sure like to hear how you guys are backing up your RAID 0 drives.
