It seems that the raccoons have turned my kat kibble into more raccoons. Three more. And I guess they're still suckling since only mom is eating tonight.

Hmm, got back from a very nice, though short, vacation in Portland, ME. Now, it appears, their is a military coup in the works.

The Passamaquoddy tribe made a bad choice. A - they thought they could trust European Americans. B - they thought European illnesses wouldn’t devastate almost their entire tribe. To be fair - A was just their way as a more gentle tribe and B couldn’t be known to them.

Made a couple of pizzas on Saturday. Made the dough on Wednesday. Did a cold ferment for close to three days. Each day, fold and stretch. Reform ball and put back in refrigerator. Put dough out on Saturday around noon and tossed/spread after three hours coming to room temp. It tasted great! I had a coworker over and he told me it was the greatest pizza he ever had. Made me feel good, but I tried to keep it in perspective. Although, I did really like it too.

First pizza:
  • Pepperoni
  • Sauteed mushrooms (olive oil and a couple pinches of kosher salt)
  • Fresh basil
Second pizza:
  • Italian sausage
  • Yellow onion
  • Black olives
Both pizzas:
  • Tomato sauce
  • Garlic powder
  • Oregano
  • Freshly grated parmesan and asiago
  • Freshly sliced whole milk mozzerella and provolone
  • Olive oil brushed on crust
