Just got done deep frying them and cleaning up. Hot oil is messy!

They are now in the oven on a wire rack for 30 minutes. Makes all the difference. Deep frying seals in the juices. Baking turns that chewy fat into crispy bites. Learned that years ago from Alton Brown.
