on the table was 1lb of beef, 1lb of pork, 2 kinds of veggies, various fishballs, tofu. Also cooked some udon for my son.

You simply add what you want to the soup, don't like mushrooms? Don't add the mushrooms. The pot is brought to a boil on the table with nothing in it but the stock. Everyone then adds raw uncooked meat and other ingredients from smaller plates around the table and waits for it all to simmer and cook in front of them.

lulz california is kind of far from Toronto. Pretty sure you have hotpot restaurant in ca.
I've always been a sucker for any type of jiaozi. I could eat plate after plate after plate after plate after plate of good jiaozi. Not the most common ingredient in hot pots but you do find them on the menu, course here they'd be shui jiao since it's in soup.

I love mushrooms in hotpot. This is used in hotpot a lot, but I forgot to buy them...
