I made your receipe up for our dinner tonight and it is sooo good! This one's a keeper and going right in my favorites book !! Thanks ! :D


Here's Dapunisher's chicken for those of you who missed it !


Chicken Italiano


4 boneless chicken breasts (7 ounces each)
Salt and pepper
12 ounces sauteed spinach
1 red pepper, roasted, peeled and quartered
12 ounces goat cheese
8 ounces Parmesan
4 teaspoons chopped Italian parsley
6 ounces flour
2 eggs
1/2 cup milk
Bread crumbs
4 ounces Romano
2 teaspoons granulated garlic
Salt and pepper
6 ounces olive oil
Preheat oven to 350 degrees F. Pound chicken and season each breast with salt and pepper. Top chicken with spinach, red pepper, goat cheese, Parmesan, salt and pepper, to taste. Roll chicken with ingredients inside. Lightly dust each piece of chicken with flour. Whisk eggs and milk in bowl. Roll chicken in milk-egg mix. Combine bread crumbs, parsley, Romano, garlic, salt and pepper in a separate bowl. Roll chicken in bread crumb mixture. Heat skillet to low-medium and add olive oil. Lightly saute the chicken until golden brown on both sides. Bake for 12 to 15 minutes or until done.

Yield: 4 servings
Prep Time: 20 minutes
Cook Time: 15 minutes

EDIT: a few of the differences/additions are that I used 1 med. clove of Fresh Garlic minced and added to the spinach, and used our Italian bread as the basis for the coating.

Vox's chicken


Chicken slivers suitable for stir frying ......

soya sauce
sesame seed oil
Honey
Brown sugar
Lemon juice
Garlic

Cook over BBQ ...very low heat so it doesn't burn or turn to candy

Another good recipee..... can i substitute soy sauce? i dunno if i can get soya sauce :D

oks ....... here's my favorite ...it's an Indian dish and a bit spicy



Chilli Chicken

1.Take small pieces of boneless chicken and put them on a pan (heat) till they are light brown.
2. Take them out .... and put in a little oil ( I use mustard oil).
3. Put in large cut pieces of onion ( long threads) in it and then small pieces of 2 pieces of garlic cloves.
4.Add a little turmeric ( very little - like 1/5 of a tablespoon).
5.Add Dry Coriander Powder - 1/2 tablespoon
6. Add dry Cumin powder - 1/2 tablespoon and dry red chilli powder ( 1/2 tablespoon)
7. Add Chilli Chicken pre-prepared spice mix ( I make it myself but it takes long) - you can get this at most Indian / Pakistani stores - this is not essential though ... the dish tastes good even without it !
8. Add a little water ( so that it's a viscous mix ) ...... Add the chicken pieces
9. Increase the heat to max. - cover the pan
10. Add cut capsicum ( long threads) after about 10-12 mins.
11. Keep it on heat for about 10 more mins. ( covered).
12. Eat with rice or "chapatis"

The whole thing takes about 1/2 hrs.

ive been eating a lot of pad thai lately. great stuff. heres my recipe.

Pad Thai

Ingredients

1 (12 ounce) package wide rice noodles or 1/2 pkg linguine (simple substitue)
2 tablespoons butter (or olive oil)
1 pound boneless, skinless chicken breast halves, cut into bite-sized pieces
1/4 cup olive oil
4 eggs
2 tablespoon vinegar
4 tablespoons fish sauce (or soy sauce)
3 tablespoons white sugar
1 tsp salt
1/8 cup crushed red pepper or cayenne pepper to taste (about 1-2 tsp)
2 cups bean sprouts
1/4 cup crushed peanuts
3 green onions, chopped
1 lemon, cut into wedges
(shallots and carrots make nice additions)


Directions
1 Soak rice noodles in cold water 30 to 50 minutes, or until soft. Drain, and set aside. OR cook 1pkg linguine and drain, set aside.

2 Heat butter in a wok or large heavy skillet. Saute chicken until browned. Remove, and
set aside. Heat oil in wok over medium-high heat. Crack eggs into hot oil, and cook until
firm. Stir in chicken, and cook for 5 minutes. Add softened noodles, and vinegar, fish
sauce, sugar and red pepper. Adjust seasonings to taste. Mix while cooking, until noodles
are tender. Add bean sprouts, and mix for 3 minutes.

Garnish with crushed peanuts, chopped green onions and wedge of lemon.

serves approx 4 people

I have tried that in a lil' different way ... tastes great !
