It's been in the oven for 20 minutes. Just checked it, wasn't even close to being done yet. I think it's pretty thick.

I'm sure it would be even better if we let it marinate overnight instead of ~1hr... Will have to try that next time.

Oh I'm sure it's still gonna be REALLY good. I freakin love any fish. Actually had some shark a few days ago (or was it last week...) My mind isn't working at its most efficient but whatever. I envy you big time :(

Alton Brown did it in a cardboard box with a hotplate and a skillet full of sawdust. Look at the box in the picture. ;)

Not a bad plan either. GagHalfrunt's instructions for foil wrapped baking give more of a poached effect, which is also good.

To bake, preheat oven to 350. Use aluminum foil in bottom of pan, and cover with small amount of olive oil. Place fillet skin-side up; put a little olive oil on the ski-side. Bake for 10-12 minutes. Remove from oven, flip fillet over. Coat top with either more olive oil or melted (real) butter; add generous amount of lemon-pepper and lemon slices. Return to over for another 12-15 mintues (extremely thick fillets may require longer time).
