I'm wondering what programs on this DVD are useful, and what is redundant or not useful. Looking to keep unnecessary programs off my system, but I'm unfamiliar with what the purpose of some of this stuff is.

I just built my first system, so I'm new to this.

My motherboard is an ASUS p8z77-v PRO.

Thanks!

You should install the AI suite since there are some tools there to help you understand OC'ing, control your fans, etc. Later you'll decide it you like it or not.
Intel(R) Rapid Storage Technology is only useful if you intend to do RST caching (google that)

I installed AI Suite and already auto-overclocked my CPU. I think it pushed my i5-3570 from 3.4 to 4.5 something. Still learning all the ins and outs of oc'ing.

What about Daemon Pro Tools and Lucid Logix?

I would avoid the auto-overclock. It raises voltage unnecessarily high, which shortens transistor life and burns more electricity. I have an Asus P8Z77-V and can get to 4.1 UNDERvolting slightly. You could probably get to 4.5 with just a slight bump. It's quite easy, just set a voltage and gradually turn up the speed (check the "group core" or whatever it's called) on the tab. Run a burn test to ensure stability, and keep going until something fails (highly unlikely you will really blow anything up).
