I'm in a hurry because I already have the rice cooking.. Every time I cook fried rice, the texture is crap but the flavor is great. How do I cook the rice in the wok so that it stays dry and doesn't get mushy and sticky when I stir it up?
EDIT: I really didn't mean to start a debate about ethnicities.. I just wanted some good ideas for how to cook good fried rice that stays as kernels and doesn't get sticky (like sushi rice does). I put the "ASIANS!!!" in there because I thought it was slightly droll yet truthful. I have never in my life had bad rice from an asian restaurant - or any of my asian friends. I'm not taking the "ASIANS!!!" out because it is entirely not meant as anything other than a compliment to asian food. BTW, just as Iron Chef has Japanese chefs that cook Italian and French food - and really damn well, I don't believe that only asians know how to cook rice well. I'm sure there's probby one or two Americans that could microwave a bowl of leftover rice well.
Also, thanks brtspears2 for answering my questions (and everyone else who answered).. I just ate the best rice I've ever cooked (which would be much worse than any chinese or japanese restaurant I've ever had).. so I still have a long way to go.
