ASIANS!!! How the hell do I cook rice so that it stays dry and non sticky when I fry it??

I'm in a hurry because I already have the rice cooking.. Every time I cook fried rice, the texture is crap but the flavor is great. How do I cook the rice in the wok so that it stays dry and doesn't get mushy and sticky when I stir it up?



EDIT: I really didn't mean to start a debate about ethnicities.. I just wanted some good ideas for how to cook good fried rice that stays as kernels and doesn't get sticky (like sushi rice does). I put the "ASIANS!!!" in there because I thought it was slightly droll yet truthful. I have never in my life had bad rice from an asian restaurant - or any of my asian friends. I'm not taking the "ASIANS!!!" out because it is entirely not meant as anything other than a compliment to asian food. BTW, just as Iron Chef has Japanese chefs that cook Italian and French food - and really damn well, I don't believe that only asians know how to cook rice well. I'm sure there's probby one or two Americans that could microwave a bowl of leftover rice well. :p

Also, thanks brtspears2 for answering my questions (and everyone else who answered).. I just ate the best rice I've ever cooked (which would be much worse than any chinese or japanese restaurant I've ever had).. so I still have a long way to go.

You gotta dry the rice a bit before you can fry it well. Perhaps put the cooked rice in the fridge for a few hours....let it cool down. This will prevent the mushy. Sticky is natural, keep the heat low to med heat, wok well greased and hopefully its seasoned, and you'll be ok.

Maybe you can tell us more about how you're doing it. My rice never turns out soggy.

Put it in the fridge until it cools. BTW, I am not Asian, so you might want to take this suggestion with a grain of salt.;)

They (Asians) know how to cook the rice.

Why not ask the people who know how to do it best how to do it?

when making fried rice you are supposed to use day old rice that dried out a bit.

Fried rice is better if you use day-old cooked rice, preferably room temperature as others have noted.

when cooking the rice, try not to use TOO much water. just enough so that it's cooked. you might have to experiement with this as each rice cooker is different. i know how much water i need to cook mine perfectly.

people always say to put the rice in the fridge for a couple of hours but i NEVER do that and my fried rice comes out perfect.

i'm asian btw, so you should listen to me :) oh yes, i'm also female, so i shoudl know how to cook!

(nah, i actually live on ramen heheh)

ALWAYS clean the rice about 3 times.

Have the rice in the rice cooker metal thing that you can take out. Fill it about 3/4 full and then wash the rice. Move it around and around and work it. Squeeze it and the water will turn more milky, this is from the rice. Do this about 3-4 times until the water after being washed is cleaner.

Now put this in to the rice cooker. Fill the water level so that it is *about* 1.5cm ABOVE the level of the rice when its flat.

Cook rice.

DON'T WASH the rice after cooking. A lot of English families that I've eaten around do this.

Now fry the rice.

My parents own a Chinese takeaway and the rice is never sticky. I think the main thing is the special industry strength cooker that they have. It is really hot and has many gas out lets for the gas to come out. Its cooked fast and the wok is big and of very good quality for spreading the heat.

We don't use much oil.
We dont' use day old rice.

Main things practice I guess.

umm oh yeah. do you add eggs to your fried rice? be careful how you cook that and mix it up, it can make the fried rice mushy as well.

lol, this thread is a trip. Your a little to quick to the gun pyonir, Asians DO know their rice, why not ask the people with the most likely hood of knowing the answer to his rice question?. Sure there are plenty of asians who may not know the answer, but if you've known more than a few, you know that AT LEAST one of them uses rice as the proverbial staple part of their diet. It's not like brxndxn was calling them rice pickers

. A friend of mines mom is from Vietnam and every time I eat over at his house she makes INSANELY tasty dishes that always contain a mountain of rice that is cooked in a way I can never reproduce. I think you guys are being just a tad bit anal on this one.

well lets face the facts people, asians know asian rice better than other people. if you want some crappy uncle ben weirdo rice, then go ask some non-asian people.

rule of thumb, two and half cups of water for two cups of rice in a rice cooker.

Also, some kind of rice are more sticky then others..

For the rice that tradtional asian people eat, i would buy them from asian grocery stores rather than from per say, krogers, HEB, albertson's etc.
